Crottin is a small cheese made of goats milk. The cheese has a subtle nutty flavor. As it ripens it will become crumbly and the rind becomes a bluish color.
Crottin can be used as a substitute for cream or milk. You can melt it in pasta dishes, mac and cheese or a simple mushroom pasta. It goes well in mashed potatoes.
